Fall into autumn with this Kabocha Sandwich recipe! This sandwich is the perfect accompaniment to fall picnics and school lunches!

Ingredients
  • Kabocha squash 1/4 pc
  • Chungjungone Luncheon meat 2 oz
  • Bread2 slices
  • Honey Mustard 1 tbsp
  • Greek yogurt 2 tbsp
  • Cheese 2 sheets
  • Lettuce 3 pcs
  • Onion 1 tbsp
  • Grape Tomato 4 pcs
  • Pepper 1 tsp

Recipe

step 1

1. Cut kabocha squash into quarters and microwave for 5-7 min until tender.

step 2

2. Dice onion and mix with squash, pepper and greek yogurt (1 tbsp)

step 3

3. Halve grape tomatoes and thinly slice luncheon meat

step 4

4. Mix greek yogurt (1 tbsp) and honey mustard for spread

step 5

5. Assemble sandwich with spread, cheese, luncheon meat, kabocha squash mixture, grape tomatoes and lettuce

step 6

6. Cut in half and enjoy!
