1. Cut extra firm tofu (4oz) into cubes
2. Slice mix of mushrooms (4oz)
3. Sear tofu for 4 minutes until brown
4. Slice carrots, green onion, ginger and add it to the pan with the mushrooms then stir fry
5. Add ginger, soy sauce (3tbsp), plum syrup/sugar (1tbsp), and season with salt accordingly
6. Cook rice noodles (1 package)
7. Place tofu and vegetables on top and garnish with cilantro
