Ingredients
  • Somen noodles4 oz
  • Kimchi, chopped2 oz
  • Sugar (divided)2 tbsp
  • Sesame oil1 tbsp
  • Cold noodle broth1 pack
  • Vinegar (divided)2 tbsp
  • Egg1 pc
  • Cucumber, thinly sliced1 oz
  • Kimchi juice1/2 cup

Recipe

1. Slice cucumber thinly and cut kimchi into small bite-sized pieces.

2. In a bowl, season the kimchi with 1 tbsp sugar and 1 tbsp vinegar.

3. Cook somen noodles according to package instructions, then rinse in cold water. Boil the egg and peel.

4. In a separate bowl, mix the broth with 1/2 cup kimchi juice, 1 tbsp sugar, and 1 tbsp vinegar.

5. Place noodles in a bowl, top with seasoned kimchi, sliced cucumber, and egg. Pour over the cold broth and drizzle with sesame oil.
